Gluten-Free Snowball Cookies

Always part of my Christmas baking. These snowball cookies are simple and delicious. Handle carefully when they are still warm, as they tend to crumble easily until the cook and set.

Gluten-Free Snowball Cookies

Snowball cookies are also known as Mexican Wedding Cakes, or Russian teacakes. These are rich, nutty, soft cookies that will literally melt in your mouth. Perfect for your Christmas cookie tray!

Instructions

  1. Preheat oven to 350 degrees F
  2. Beat butter, 3/4 cup powdered sugar and vanilla until smooth
  3. In separate bowl, whisk together flour, pecans and salt to mix.
  4. Gradually add to the butter mixture until it is completely incorporated
  5. Roll dough into balls (approximately the size of a walnut) and place 2" apart on ungreased cookie sheet
  6. Bake 12-15 minutes (bottoms should be a light golden brown, tops will still be light)
  7. Remove from oven, let sit on the baking sheet for about 5 minutes.
  8. Place 1/3 cup of powdered sugar into a bowl.
  9. Gently roll hot cookies in the powdered sugar, then place on a wire rack to cool.
  10. Once cooled, roll in powdered sugar again.
  11. Enjoy!!
